The decor, highlighted by photographs from scenes of modern Peru and crafts hand-made by local Peruvian artisans, is also a mix of the nuevo and the traditional.

Eddy Ancasi is Las Canteras' executive chef. A native of southern Peru, he trained in kitchens in Arequipa, one of Peru's culinary strongholds. He honed his skills in El Chalan and other hospitality venues in the Washington area.
